Come August 19, 2019, Seizan Uni Ramen will be opening at Picnic food park in Wisma Atria.
Derived from Seizan, a two-Michelin starred Kaiseki restaurant in Tokyo, Seizan Uni Ramen specialises in noodles served in award-winning dashi (a, umami Japanese stock).
However, their name also gives away their special dish — uni ramen, which is not commonly found in Singapore's ramen shops.
10-hour preperation
What's noteworthy is that Seizan's 40-year-old chef - Haruhiko Yamamoto - does not rely on sauces, instead preferring to keep his style of cooking light.
Yamamoto's dashi requires a 10-hour preparation, and is the backbone to many dishes served at Seizan.
Seizan also makes use of fresh, premium bafun uni (Japanese sea urchin) that does not need much seasoning once dashi and cream have been added.
This uni is then melted into a light orange soup, which is used as a base for the noodles.
Last but not least, Seizan uses custom made noodles from Japan that have both a slight sweetness as well as certain thickness to them.

Previously, limited quantities of Seizan's uni ramen were served at Nabe Saizen, a Japanese hotpot restaurant at Japan Food Town in Wisma Atria, to rave reviews:
