Ex-Crystal Jade la mian director sells mala & beef noodles at Bishan coffee shop

Restaurant-quality noodles at only S$5.

Shi Xiang Ge is a Shaanxi noodle stall operating at the kopitiam above Bishan bus interchange.

For those who are wondering, Shaan Xi is a northwestern Chinese province.

What's interesting, however, is the fact that the stall's owner used to work at Crystal Jade, and has over 28 years of experience in making la mian (or hand-pulled noodles), according to The Straits Times.

Here's a look at the stall's menu:

Beef noodles from S$5

There, you should try the signature Beef Noodles (S$5) or Beef Knife Shaved Noodles (S$5), both of which come with generous beef slices and a clear, strong broth.

If you're a bit more adventurous, you can also get the Hot and Spicy Intestine Shaved Noodles (S$5) which has a generous serving of plump and juicy pig intestines soaked in mala broth.

Shi Xiang Ge also sells Shaanxi Cold Noodles (S$3.50), a speciality dish from the area. It consists of cold rice noodles tossed in vinegar and chilli oil.

Lastly, try the Sichuan Dumplings in Spicy Sauce (S$5 for 10 pieces). These are plump pork dumplings, similarly tossed in vinegar and chilli oil.

Owner used to be La Mian Director at Crystal Jade

According to Lianhe Zaobao, Shi Xiang Ge's owner is Mr Liu Yi Jun. Liu had apprenticed at noodle houses in China since 1990, where he worked for over 10 years before finally coming over to Singapore in 2000.

He joined Crystal Jade and eventually worked his way up to became Crystal Jade's La Mian Director, ST reports.

Liu's speciality is is Beef La Mian, a dish which he has perfected with years of experience.
