Staff handled food with bare hands at Haidilao S'pore outlet

Incident occurred before outlets in Beijing discovered to have severe hygiene lapses.

Haidilao was in trouble with the Chinese health authorities after two of their native Beijing outlets were found to have serious hygiene lapses.

Hidden videos showed the kitchen at one branch to be rat-infested, and unsanitary acts witnessed included using utensils to fix a clogged sewage trough, and emptying dustpans into the sink meant for washing dirty dishes.

Unhygienic handling of food

Unfortunately, Singapore isn't spared from lapses either.

It turns out the hotpot chain was caught flouting hygiene regulations at one of its Singapore outlets before news of lapses at China's outlets were reported widely.

National Environment Agency officers found a food handler using bare hands to handle food on Aug 8, during routine inspections earlier in August.

Haidilao was issued a summons.

According to the branch manager, Jacky Fang, the necessary action has also been taken with the staff.

According to NEA, those convicted of hygiene lapses may be liable to a fine not exceeding S$2,000 and may have their licences suspended.

Known for its Sichuan-style hotpot and service, the Haidilao chain has four operational outlets so far, with a fifth one at Bedok Mall.

Patrons usually have to wait one to two hours for a table, but Haidilao's exemplary service offers snacks, games, drinks and manicures, while the customers wait for a table.
