Chances are if you have survived the circuit breaker until now, you might be a little tired of the cai png downstairs.

So, if you're in the mood for something fancy, here's a simple Italian carbonara recipe that you can try out.

It only requires five ingredients:

  1. Black pepper
  2. 1 Egg
  3. About four handfuls of Pecorino Romano, grated
  4. Guanciale (cured pork cheek)
  5. 1 serving of pasta

If you can't get your hands on guanciale, bacon (or turkey bacon, if you don't eat pork) is a good substitute.

And if you cannot get Pecorino Romano, you can use Parmesan cheese instead.

Directions

Boil a pot of water to cook your pasta. While it is boiling, cut up your guanciale (or bacon) into bite-sized pieces.

Dump the guanciale into a pan to cook on low heat.

While that is going on, start preparing your egg-cheese sauce.

Break an egg into a bowl, add three handfuls of Pecorino Romano to it. Whisk it to incorporate the cheese and egg.

Add black pepper to the mixture before setting it aside.

Once the pot of water boils, add some salt to it before adding your raw pasta. Once your pasta is done, take it out of the pot and add it to your pan of guanciale.

Stir the pasta and the bacon together. Add one to two ladles of pasta water to the pan. Stir to incorporate the water, pasta, and guanciale.

After stirring for about three to four minutes, take your pan of pasta off the heat.

Add your egg-cheese mixture to your pasta, and incorporate them together.

Let your carbonara sit for 30 seconds.

On a clean plate, add some Pecorino Romano and black pepper. Add your serving of carbonara and top it with more cheese and black pepper.

This dish serves one.
