Circuit breaker: 3-ingredient banana recipes for pancakes, cookies & ice-cream

You can have your bananas in pyjamas.

If you've been pottering around the kitchen, we've compiled four more easy experiments to have fun with.

These dishes require only three ingredients, one of which is bananas.

1. Banana Pancakes

There are many different recipes of banana pancakes floating around the Internet, but here's a version of it from Eugenie Kitchen.

Ingredients:

  1. One and a half large bananas, ripe to overripe
  2. Two eggs
  3. 1/8 teaspoon of baking powder

Method:

  1. Crack the eggs and add in the baking powder in a mixing bowl. Whisk to combine.
  2. Add the bananas in another bowl and lightly mash with a fork, but not too much.
  3. Pour the eggs and baking powder mixture into the bananas and stir to combine.
  4. In a frying pan, cook mini pancakes over a medium-low heat. When the baking powder is activated (bubbles should be seen), flip it over and cook for one minute more.

You can add some maple syrup and blueberries to the banana pancakes too.

2. Banana Cookies

Even if you don't have baking powder or flour, you can still make some cookies with this recipe from Marisa Moore.

Ingredients:

  1. Two small, very ripe bananas
  2. One cup old-fashioned oats
  3. 1/4 cup of natural peanut butter (creamy or crunchy)

Method:

  1. Preheat the oven to 175°C. Lightly spray half a baking sheet with oil.
  2. Mash the bananas in a bowl.
  3. Add the oats and peanut butter and mix.
  4. Roll the mixture, then flatten 10 to 12 small cookies and place them on the baking sheet.
  5. Bake at 175°C for about 12 minutes or until the cookies are golden brown.

3. Banana Ice Cream

For a colder treat, Foodess has a recipe for a simple banana ice cream.

Ingredients:

  1. One cup of milk
  2. Three large chopped bananas, frozen
  3. 1/4 teaspoon of pure vanilla extract

Method:

  1. Combine the milk, bananas, and vanilla extract in a blender or food processor. Blend until smooth and creamy, which will take about 60 seconds on a blender's full speed.
  2. If the blades are catching, add a splash of milk to get it moving again.
  3. Serve immediately, or transfer to a shallow dish and freeze for 30 minutes to firm it up and make it more scoopable.

For leftovers, store the ice cream in an airtight container.

If you'd like to be a bit fancier, you can try adding toppings like strawberries and chocolate sauce.

4. Banana Mug Cake

Spoon University has a quick and easy-to-make banana mug cake recipe, so fret not, beginner bakers.

All you need is a microwave oven and a mug.

Ingredients:

  1. One egg
  2. One ripe banana
  3. Two tablespoons of cocoa powder

Method:

  1. Mash the banana in a bowl until there are no lumps left.
  2. Add the egg and mix well.
  3. Add the cocoa powder and mix well until combined.
  4. Pour the mixture into a mug and microwave for 90 seconds.

Add toppings that you like, like chopped nuts or icing sugar, and let it cool for a minute before tucking in.
