Sushi Zushi is a modern Japanese restaurant that aims to fuse traditional dishes with innovative flavours.
The restaurant features an open-concept dining counter, reminiscent of those typically found in omakase establishments, and accommodates 28 diners.

Though Sushi Zushi currently does not serve omakase, its seating layout elevates the dining experience nonetheless, as patrons watch their dishes come to life right before their eyes.

The restaurant's speciality is its rice, which is hand-beaten twice daily and marinated in red vinegar.
Here's what we tried:
California Hand Roll (S$4++)

Sushi Zushi's take on this traditional dish comprises crab stick, avocado and cucumber, drizzled with mayonnaise and topped with a generous portion of tobiko.
Spicy Tuna Hand Roll (S$4.50++)

The restaurant's housemade spicy mayonnaise definitely stole the spotlight for this one, offering a spicy kick which elevated the dish's umami flavour.
Salmon Skin Hand Roll (S$4.50++)

For those craving something crunchy, opt for Sushi Zushi's Salmon Skin Hand Roll, comprising fried salmon skin, fish roe and mayonnaise.
Wagyu Beef Hand Roll (S$9++)

This comprised flame-torched beef doused in shoyu, garnished with spring onion and served alongside raw quail egg for dipping.
Aburi Tamago Mentai (S$3.50++)

This dish envelopes rice in flame-torched tamago, which was sweet without being too overwhelming. Though not as fluffy as I had hoped, the tamago paired very nicely with the mentaiko drizzle, making the dish both sweet and savoury.
Tuna Tataki (S$7++)

Featuring lightly seared tuna, this dish leaned on the tangier side, as the tuna seemed to highlight the sourness of the rice.
Engawa (S$6++)

The flounder fin was delightfully charred, lending it a smoky flavour which neutralised the acidity of the rice, and almost melts in your mouth as you chew.
If you like umami flavours, this one's a must-order.

The restaurant will also be running a promotion on their sashimi slices, for S$1.50++ per slice.
