Singapore’s first and only restaurant in a cave setting will open on Mar. 12, 2025 within Mandai Wildlife Reserve, near the entrance of Rainforest Wild Asia.
The Cavern Restaurant, inspired by the Mulu Caves of Sarawak, is by Tunglok Group.
Mulu Caves in Malaysia is one of the largest and most intricate cave systems in Southeast Asia and a Unesco World Heritage Site.
It has a 158 pax seating capacity.
Serves international western cuisine
The restaurant, serving international western cuisine, will be helmed by head chef Sheng Lim.
Lim has previously worked at Jaan, Cure Concepts, and Ce La Vi Singapore.
According to a news release, Cavern Restaurant has implemented numerous sustainable practices throughout its operations.
The restaurant features menu covers of mycelium leather derived from mushrooms, a biodegradable alternative to traditional materials that offers a decade of durability.
Cutlery holders are made from reclaimed teak and the restaurant has also partnered with alcohol suppliers to utilise larger volume packaging, reducing glass consumption and storage requirements while maintaining a more sustainable supply chain.
