Polar's secret curry formula for curry puffs prepared in locked room at Woodlands only 1 worker can enter
Curry puff.
A CNA article on Jan. 2, 2026, delved deep into how Polar makes their food.
The article touched on its long history, their many reinventions, and their best seller (sugar rolls).
In a 2024 write-up by Polar, they discussed their adherence to artisanal methods while embracing modern technologies.
They also mentioned how their curry puff is made from "a secret curry chicken recipe that has been carefully guarded and passed down through the decades".
Apparently, they were not exaggerating at all.
In the CNA article, the third-generation keeper, Chan Kok Yew, of this recipe says he continues to oversee some aspects of the production, and to help ensure each batch tastes as it should.
The tightly-kept curry mix formula is prepared daily in their Woodlands factory behind a "padlocked door". The room, called the "Curry Room", is off-limits to all 350 employees, except Chan.
