An employee of a fish head steamboat eatery in Bukit Panjang has been caught on camera descaling and slicing fish on the premises' grimy floors, and next to an open drain.

This is the gag-inducing video:

The 51-second long footage also shows the floor littered with random parts of the fish.

When a reporter from Shin Min Daily News went down to investigate, cutlery and condiments were seen at the back of the shop where the employee prepared the fish.

Unwashed dishes were in a bucket next to the rubbish collection point.

Name of the shop revealed

The Chinese daily has also contacted the citizen who filmed the video, who revealed the shop's name as Jia Wang Fish Head Steamboat.

He added that he saw the scene from his home, and decided to film it as he felt that the employee had breached hygiene regulations.

Supervisor apologises, calls it "a moment of negligence"

The 43-year-old supervisor of the shop, identified as Liu, has since apologised for the incident, calling it "a moment of negligence" on the part of his young employee.

Liu did not know about the incident until a long-time customer alerted him to the video circulating online.

He also says that the eatery takes food hygiene very seriously, and will re-educate said employee about such procedures.
