Lobsters in local fare are becoming increasingly common.
The newest contender on the scene is 新式 Xinshi Lobster & Seafood Bee Hoon, located at Newton Food Centre.
They are riding on the trend by adding cheese, which gives us the Cheese Lobster Bee Hoon (S$30).
The price may be a little steep, but you're getting quality here.
They use Hokkaido mixed cheese in the form of cheddar, gouda, and mozzarella. The cheese comes as a layer on top of the bee hoon (think baked rice), and it's torched right before serving.
Milk and cheese are also added to the broth itself, so you know they don't just put cheese on the bee hoon and call it a day.
The rest of the dish feature prawns and clams.
If you're looking for something cheaper, Xinshi also has a range of other dishes with cheese, such as the Cheese Seafood Bee Hoon (S$9.80). Its ingredients are similar to the lobster version, but without the lobster (eh).
Another option is the Cheese Scallop Beehoon, which goes for S$15 and before you think it's just the seafood that's different, we hear that the broth for each dish actually differs, as it is cooked with the type of seafood ordered.
